Steak Preparation
Prepare the Marinade
In a small bowl, mix together olive oil, salt, black pepper, garlic powder, and fresh rosemary to create a marinade.
Marinate the Steak
Coat the flat iron steaks with the marinade, ensuring they are evenly covered. Let them marinate in the refrigerator for at least 30 minutes.
Rest and Slice
Once cooked, remove the steaks from the heat and let them rest for 5 minutes before slicing against the grain.
Truffle Fries Preparation
Prep the Potatoes
Wash and peel the russet potatoes. Cut them into evenly sized fries, about 1/4 inch thick.
Soak the Fries
Place the cut fries in a bowl of cold water and let them soak for at least 30 minutes to remove excess starch.
Cook the Fries
Preheat the oven to 425°F (220°C). Drain the soaked fries and pat them dry with a clean towel. Toss the fries with truffle oil, salt, and pepper. Spread them out in a single layer on a baking sheet.
Bake the Fries
Bake in the preheated oven for 25-30 minutes, flipping halfway through, until golden brown and crispy.
Finish and Serve
Remove the fries from the oven and immediately sprinkle with grated Parmesan cheese and chopped fresh parsley. Serve hot alongside the sliced flat iron steak.
