For the Salted Worms

    Prepare the Worms

    If using dried worms, soak them in warm water for 20 minutes. If using fresh worms, rinse thoroughly.

    Season the Worms

    In a skillet, heat olive oil over medium heat. Add the worms and salt, cooking until crispy (about 5-7 minutes). Set aside.

For the Creamed Leek Oil

    Prepare the Leeks

    Clean the leeks thoroughly to remove any grit. Slice them thinly.

    Cook the Leeks

    In a saucepan, melt butter over medium heat. Add the sliced leeks and sauté until soft (about 5 minutes).

    Make the Creamed Leek Oil

    Add heavy cream and vegetable stock to the leeks. Season with salt and black pepper. Simmer for 10 minutes, then blend until smooth.

For the WORT Potato

    Prepare the Potatoes

    Peel and cube the potatoes.

    Cook the Potatoes

    In a pot, cover the potatoes with water and add salt. Boil until tender (about 15-20 minutes). Drain and toss with olive oil, salt, and pepper.

For the Crispy Leek

    Prepare the Leek Greens

    Cut the leek greens into thin strips.

    Fry the Leek Greens

    Dredge the leek greens in flour. Heat vegetable oil in a deep pan. Fry the floured greens until golden and crispy (about 3-4 minutes). Drain on paper towels.
