Rinse the Rice
Place the long-grain rice in a fine-mesh strainer and rinse under cold water until the water runs clear. This removes excess starch and prevents the rice from becoming gummy.

Prepare the Beans
If using canned kidney beans, drain and rinse them under cold water. If using cooked beans, ensure they are tender and ready to use.

Chop Vegetables
Chop the green onions and mince the garlic. Set aside for later use.

Combine Ingredients
In a large pot, combine the rinsed rice, kidney beans, coconut milk, and water. Stir well to incorporate all ingredients.

Add Seasonings
Add the chopped green onions, minced garlic, thyme, allspice, salt, black pepper, and the whole scotch bonnet pepper to the pot. Be careful not to break the pepper as it will add heat to the dish.

Cook the Rice
Bring the mixture to a boil over medium-high heat. Once boiling, reduce the heat to low, cover the pot with a lid, and let it simmer for about 20-25 minutes or until the rice is cooked and has absorbed all the liquid.
