Beet Pickling

    Prepare the Beets

    Wash and trim the beets, then place them in a pot.

    Make the Pickling Brine

    In a separate bowl, combine water, apple cider vinegar, sugar, salt, peppercorns, mustard seeds, and bay leaves.

    Combine and Simmer

    Pour the pickling brine over the beets in the pot, bring to a boil, then reduce to a simmer for 30 minutes.

    Cool and Store

    Remove from heat, let cool, then transfer the beets and brine to a jar and refrigerate for at least 24 hours before using.

    Preheat the Oven

    Preheat your oven to 450°F (230°C).

    Prepare the Bones

    Place beef marrow bones on a baking sheet, drizzle with olive oil, and sprinkle with salt and black pepper.

    Roast in the preheated oven for about 15-20 minutes until the marrow is soft and starting to melt.

Toast Preparation

    Prepare the Baguette

    Slice the baguette into 1-inch thick slices and spread butter on each side.

    In a skillet or on a grill, toast the buttered baguette slices until golden brown on both sides.

    Finely chop fresh parsley and sprinkle it over the toasted bread.

Assembly

    Spread the roasted marrow onto the toasted baguette slices and top with the pickled beets.
