Marinade Preparation

    Make the Marinade

    In a blender or food processor, combine the Scotch bonnet peppers, garlic cloves, fresh thyme, allspice, brown sugar, soy sauce, lime juice, ground cinnamon, ground nutmeg, salt, black pepper, and vegetable oil. Blend until smooth.

    Marinate the Chicken

    In a large bowl, place the chicken legs and pour the marinade over them. Ensure all pieces are coated well. Cover and refrigerate for at least 2 hours, preferably overnight for best results.

Grilling

    Prepare the Grill

    Preheat your grill to medium-high heat. If using charcoal, prepare it until it's covered with white ash.

    Grill the Chicken

    Remove the chicken from the marinade, letting excess drip off. Place the chicken on the grill, skin side down. Grill for about 10-15 minutes. Flip and grill for another 10-15 minutes, or until the internal temperature reaches 165°F (75°C) and the skin is crispy and charred.

    Add Green Onions

    During the last few minutes of grilling, place the green onions on the grill. Cook them until they are slightly charred and tender.

    Rest and Serve

    Once done, remove the chicken and green onions from the grill. Allow the chicken to rest for 5 minutes before serving. Serve with grilled green onions on the side.
