Jerk Marinade Preparation

    Prepare the Marinade

    In a blender or food processor, combine scotch bonnet peppers, green onions, garlic cloves, fresh ginger, soy sauce, brown sugar, allspice, thyme, cinnamon, salt, black pepper, and lime juice. Blend until smooth.

    Marinate the Ribs

    Place the pork ribs in a large zip-lock bag or a shallow dish. Pour the jerk marinade over the ribs, ensuring they are well-coated. Seal the bag or cover the dish and marinate in the refrigerator for at least 4 hours, preferably overnight.

Cooking the Ribs

    Preheat the Oven

    Preheat your oven to 150°C (300°F).

    Prepare for Baking

    Remove the ribs from the marinade and shake off the excess. Place the ribs bone-side down on a baking sheet lined with aluminum foil.

    Cover the ribs with another piece of aluminum foil and bake in the preheated oven for about 2.5 to 3 hours, or until the meat is tender and pulling away from the bones.
