Preparation of Rice Mixture

    Rinse the Rice

    In a fine mesh strainer, rinse 1 cup of long-grain white rice under cold water until the water runs clear. This removes excess starch.

    Soak the Rice

    In a large bowl, combine the rinsed rice, 4 cups of water, and 1 cinnamon stick. Let it soak for at least 4 hours or overnight at room temperature.

Blending and Straining

    Blend the Mixture

    After soaking, remove the cinnamon stick, and transfer the rice and soaking water to a blender. Blend on high until the mixture is smooth and the rice is finely ground, about 1-2 minutes.

    Strain the Mixture

    Using a cheesecloth or fine mesh strainer, strain the blended mixture into a large pitcher or bowl, discarding the solid rice pulp. Press gently to extract as much liquid as possible.

Sweetening and Serving

    Sweeten the Horchata

    Add 1 cup of sugar and 1 tsp of vanilla extract to the strained liquid. Stir well until the sugar is completely dissolved.

    Add Milk and Cinnamon

    Stir in 2 cups of milk (dairy or non-dairy) and 1 tsp of ground cinnamon until fully combined.

    Serve the horchata over ice in tall glasses. Optionally, sprinkle with additional ground cinnamon before serving.
