Calamari Preparation

Clean the Calamari
Begin by cleaning the fresh calamari. Remove the head, tentacles, and innards. Rinse thoroughly under cold water and slice the body into rings.

Prepare the Breading
In a mixing bowl, combine the all-purpose flour, cornstarch, salt, black pepper, and paprika. In another bowl, whisk together the eggs and milk until well combined.

Coat the Calamari
Dip each calamari ring first into the egg mixture and then into the flour mixture, ensuring they are well coated.

Heat the Oil
In a deep frying pan, heat the vegetable oil over medium-high heat until hot but not smoking.

Fry the Calamari
Carefully add the coated calamari rings to the hot oil in batches. Fry for about 2-3 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

In a medium bowl, combine mayonnaise, Sriracha sauce, lemon juice, garlic powder, and honey. Mix well until all ingredients are fully incorporated.

Taste the sauce and add salt to taste. Adjust the Sriracha for more heat if desired.
