Prepare the Potatoes

    Cook the Potatoes

    Heat olive oil in a skillet over medium heat. Add diced potatoes, season with salt and black pepper, and cook until golden and crispy, about 10-15 minutes, stirring occasionally.

Cook the Eggs

    Prepare Eggs

    In a separate pan, cook the eggs to your desired style (scrambled, fried, or sunny-side-up). Season with salt and pepper. Once cooked, set aside.

Assemble the Quesadilla

    Layer the Quesadilla

    Place one flour tortilla in a large skillet over medium heat. Spread half of the cheese on the tortilla, then layer the fried potatoes and cooked eggs on top. Sprinkle the remaining cheese over the fillings and top with the second tortilla.

    Cook the Quesadilla

    Cook for 3-5 minutes on each side or until the tortillas are golden brown and the cheese has melted. Use a spatula to carefully flip the quesadilla.

    Cut the quesadilla into quarters and serve hot with red and green chile sauces on the side for dipping.
