Cook the Filling
In a large skillet over medium heat, add the ground beef (or chicken) and cook until browned. Drain excess fat. Add the chopped onion and minced garlic. Sauté until the onion is translucent.

Season the Filling
Add cumin, chili powder, salt, and black pepper to the meat mixture. Stir well to combine, and cook for another 2-3 minutes until fragrant. Remove from heat.

Prepare Tortillas
Warm the corn tortillas in a dry skillet or microwave until pliable. This will make them easier to roll.

Fill Tortillas
Place a generous spoonful of the meat filling in the center of each tortilla. Roll up tightly and place seam-side down in a greased baking dish.
Baking

Top with Sauce
Pour the enchilada sauce evenly over the rolled tortillas in the baking dish.

Add Cheese
Sprinkle shredded cheese over the top of the enchiladas.

Bake
Preheat your oven to 350°F (175°C). Bake the enchiladas in the preheated oven for about 20-25 minutes, or until the cheese is melted and bubbly.

Remove from the oven, garnish with chopped cilantro, and serve hot. Enjoy your delicious enchiladas!
