    Prepare the Marinade

    In a bowl, combine olive oil, minced garlic cloves, rosemary, lemon zest, and lemon juice. Mix well.

    Marinate the Lamb

    Rub the lamb shoulder with salt and black pepper. Place the lamb in a large resealable bag or dish and pour the marinade over it. Seal or cover and refrigerate for at least 2 hours, preferably overnight.

    Prepare the Vegetables

    Peel and chop the carrots, potatoes, and onions into large chunks.

    Preheat the Oven

    Preheat your oven to 350°F (175°C).

    Roast the Lamb and Vegetables

    In a roasting pan, place the marinated lamb in the center. Surround it with the chopped vegetables. Drizzle any remaining marinade over the vegetables. Cover with foil.

    Cook

    Roast in the preheated oven for about 2 to 2.5 hours, until the lamb is tender and an internal temperature of 145°F (63°C) is reached. Remove the foil during the last 30 minutes to allow the lamb to brown.

    Once cooked, remove the lamb from the oven and let it rest for 15 minutes before slicing. Garnish with fresh parsley before serving.
