Method

Marinating the Meat

    Prepare the Marinade

    In a large bowl, combine minced garlic, grated ginger, chopped scotch bonnet pepper, curry powder, soy sauce, and lime juice. Mix well.

    Marinate the Goat Meat

    Add the goat meat cubes to the marinade, ensuring each piece is well coated. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, preferably overnight.

Cooking the Curry

    Sauté the Aromatics

    In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.

    Add the Tomatoes

    Stir in the chopped tomatoes and cook until they have softened, about 3-4 minutes.

    Brown the Goat Meat

    Add the marinated goat meat to the pot and brown on all sides, about 8-10 minutes.

    Add Liquids and Spices

    Pour in the coconut milk and water. Add bay leaves, dried thyme, salt, and black pepper. Bring the mixture to a boil.

    Simmer the Curry

    Reduce the heat to low, cover the pot, and let it simmer for about 1.5 to 2 hours, or until the goat meat is tender. Stir occasionally and add more water if needed.

    Taste the curry and adjust seasoning with more salt or pepper if necessary. Remove bay leaves before serving.
