Prepare the chilies
Remove stems and seeds from the dried ancho and guajillo chilies. In a dry skillet over medium heat, toast the chilies for about 2-3 minutes until fragrant, being careful not to burn them.

Soak the chilies
Transfer the toasted chilies to a bowl and cover them with boiling water. Let them soak for 15-20 minutes until softened. Drain and set aside.

Blend the sauce
In a blender, combine the soaked chilies, cumin, oregano, salt, and black pepper. Add a cup of beef broth and blend until smooth. Set aside.

Combine ingredients
Return the seared beef to the pot and pour in the blended chili sauce. Add the remaining beef broth and stir to combine.

Simmer
Bring the mixture to a simmer, then cover and reduce heat to low. Let it cook for 2-2.5 hours, or until the beef is tender and easily shreds with a fork.
