Preparation of Beef

    Prepare the Beef

    Trim excess fat from the beef chuck roast and cut it into 2-inch cubes.

    Season the Beef

    Season the beef cubes with salt and black pepper, ensuring even coverage.

    Brown the Beef

    In a large pot or Dutch oven, heat olive oil over medium-high heat. Add the seasoned beef in batches and brown on all sides. Remove the beef and set aside once browned.

Preparation of Red Sauce

    Toast Chiles

    Remove the stems and seeds from the dried ancho and guajillo chiles. Toast them in a dry skillet over medium heat for 2-3 minutes until fragrant.

    Blend Red Sauce

    In a blender, combine the toasted chiles, garlic cloves, chopped onion, cumin, oregano, and beef broth. Blend until smooth to make the red sauce.

Cooking

    Combine Beef and Sauce

    Pour the blended red sauce into the pot with the browned beef. Bring to a simmer.

    Cover and let it simmer on low heat for about 2 to 3 hours, or until the beef is tender and easily shreds with a fork.
