Prepare the Filling
In a mixing bowl, combine the shredded cooked chicken, cheddar cheese, softened cream cheese, chopped green onions, cumin, salt, and black pepper. Mix until well combined.

Preheat the Oven
Preheat your oven to 375°F (190°C) to ensure it's ready for baking the enchiladas.
Assembling the Enchiladas

Fill the Tortillas
Take a corn tortilla and place about 1/3 cup of the chicken filling in the center. Roll the tortilla tightly around the filling and place seam-side down in a greased baking dish. Repeat this step with the remaining tortillas and filling.

Add the Sauce
Pour the enchilada sauce evenly over the top of the rolled tortillas in the baking dish. Make sure to cover all the tortillas with the sauce.

Sprinkle More Cheese
If desired, sprinkle additional shredded cheddar cheese over the top of the enchiladas for extra cheesiness.
Baking

Bake the Enchiladas
Place the baking dish in the preheated oven and bake for 20-25 minutes, or until the enchiladas are heated through and the cheese is melted.

Garnish and Serve
Once baked, remove the enchiladas from the oven. Garnish with sour cream and chopped cilantro as desired. Serve warm.
