Carnitas

Method

Carnitas

  1. 1

    Prepare the Pork

Cut the pork shoulder into large chunks and season with salt, black pepper, cumin, and oregano. Make sure to coat the meat evenly.

  2. 2

    Add Flavorings

Place the seasoned pork in a slow cooker. Add the minced garlic, chopped onion, orange juice, lime juice, and bay leaves.

  3. 3

    Slow Cook

Cover the slow cooker and cook on low for 8 hours or until the pork is very tender and easily shreds with a fork.

  4. 4

    Shred the Meat

Once cooked, remove the pork from the slow cooker and shred it using two forks. Return the shredded pork to the slow cooker and stir it with the juices.

Rice

  1. 5

    Rinse the Rice

Rinse the long-grain white rice under cold water until the water runs clear to remove excess starch.

  2. 6

    Cook the Rice

In a saucepan, combine the rinsed rice, water, and salt. Bring to a boil over medium-high heat. Once boiling, reduce the heat to low, cover, and simmer for 18-20 minutes or until the rice is tender and water is absorbed.

  3. 7

    Fluff the Rice

Remove the saucepan from heat and let it sit covered for 5 minutes. Fluff the rice with a fork before serving.

Beans

  1. 8

    Heat the Beans

In a saucepan over medium heat, add the canned black beans (drained and rinsed).

  2. 9

    Season the Beans

Stir in cumin, garlic powder, and salt. Let the beans heat through for about 5-7 minutes, stirring occasionally.
