Prepare the Leeks
Trim the root end and dark green tops off the leeks. Cut the leeks in half lengthwise, then slice them into 1-inch pieces. Rinse them thoroughly under cold running water to remove any dirt or grit. Drain well and set aside.

Prepare the Breading Mixture
In a mixing bowl, combine the all-purpose flour, cornstarch, salt, and black pepper. Mix well until fully combined.

Make the Batter
In another bowl, whisk together the cold sparkling water and the egg until smooth. Gradually add the flour mixture to the batter, whisking until just combined. It’s okay if there are a few lumps.

Fry the Leeks
Dunk the prepared leeks into the batter, allowing excess to drip off. Carefully place them in the hot oil, a few at a time, being careful not to overcrowd the pan. Fry for about 3-4 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

Serve the fried leeks immediately while hot and crispy. They can be enjoyed plain or with a dipping sauce of your choice.
