Method

Preparation of Ingredients

  1. 1

    Chop Vegetables

Dice the red bell pepper and onion into small pieces.

  2. 2

    Prepare Eggs

In a mixing bowl, whisk together the eggs, milk, salt, and black pepper until well combined.

  3. 3

    Cook Sausage or Bacon

If using sausage or bacon, ensure it is cooked and chopped into small pieces.

Cooking the Filling

  1. 4

    Sauté Vegetables

In a large skillet, heat the olive oil over medium heat. Add the chopped onion and red bell pepper, and sauté until softened, about 5 minutes.

  2. 5

    Add Eggs

Pour the egg mixture into the skillet with the sautéed vegetables. Stir gently and cook until the eggs are scrambled and cooked through, about 5-7 minutes.

  3. 6

    Mix in Meat and Cheese

Add the cooked sausage or bacon to the egg mixture, followed by the shredded cheese. Stir until the cheese is melted and everything is well combined.

Assembling the Burrito

  1. 7

    Warm Tortillas

In a separate skillet or on a griddle, warm the flour tortillas over low heat for about 30 seconds on each side to make them pliable.

  2. 8

    Fill the Tortilla

Place a generous scoop of the egg mixture in the center of each tortilla. If desired, add fresh cilantro on top.

  3. 9

    Roll the Burrito

Fold the sides of the tortilla over the filling, then roll from the bottom up to secure the filling inside.

Serving

  1. 10

    Serve with Toppings

Cut the burrito in half and serve with optional toppings such as sour cream, salsa, and sliced avocado.
