    Season the Oxtails

    In a large bowl, season the oxtails with salt and black pepper. Make sure to coat them evenly.

    Chop Vegetables

    Dice the onion, chop the carrots and celery into small, even pieces, and mince the garlic.

Cooking

    Sear the Oxtails

    In a large Dutch oven, heat olive oil over medium-high heat. Once hot, add the oxtails in batches, searing them until browned on all sides. Remove and set aside.

    Sauté Vegetables

    In the same pot, add the diced onion, carrots, and celery. Sauté for about 5 minutes until softened, then add the minced garlic and sauté for another minute.

    Add Tomato Paste

    Stir in the tomato paste and cook for 2-3 minutes, allowing the flavors to meld.

    Deglaze with Wine

    Pour in the red wine, scraping the bottom of the pot to release any browned bits. Bring to a simmer and let cook for 5 minutes.

    Return the seared oxtails to the pot. Add the beef broth, bay leaves, and thyme. Bring to a boil.

    Once boiling, reduce heat to low, cover, and let simmer for 2.5 to 3 hours, or until the oxtails are tender and falling off the bone.
