Flautas

    Prepare the Chicken

    Cook the red chile chicken by shredding cooked chicken and mixing it with red chile sauce until well combined. Set aside.

    Assemble the Flautas

    Take a corn tortilla and fill it with approximately 1/4 cup of the red chile chicken. Roll the tortilla tightly to form a flauta. Repeat with the remaining tortillas and filling.

    Fry the Flautas

    In a deep skillet, heat the vegetable oil over medium heat. Once hot, carefully add the flautas, frying them in batches until they are golden brown and crispy on all sides. Remove and drain on paper towels.

Guacamole

    Prepare the Avocados

    Cut the ripe avocados in half, remove the pit, and scoop the flesh into a bowl.

    Mix the Ingredients

    Add lime juice, salt, chopped cilantro, and diced tomatoes to the bowl with the avocados. Mash together until desired creaminess is achieved.

Pickled Red Onion

    Slice the Onion

    Thinly slice the red onion and place it in a glass jar.

    Prepare the Pickling Liquid

    In a small saucepan, combine apple cider vinegar, sugar, and salt. Heat over medium heat until sugar dissolves.

    Pickle the Onion

    Pour the warm pickling liquid over the sliced onions in the jar. Let it sit for at least 30 minutes at room temperature or refrigerate for up to a week.

Toppings

    Prepare the Toppings

    Crumble the ricotta salata and set aside. Have the arbol salsa ready to serve alongside the flautas.
