Pozole Preparation Steps

Prepare the Chiles
Remove the stems and seeds from the guajillo, pasilla, árbol, and chipotle chiles. Rinse them under cold water.

Soak the Chiles
Place the cleaned chiles in a bowl and cover them with hot water. Let them soak for about 20 minutes until they soften.

Blend the Chiles
Once softened, transfer the chiles to a blender. Add the garlic cloves, ground cumin, and a little bit of the soaking water. Blend until smooth.

Cook the Broth
In a large pot, bring the chicken or vegetable broth to a boil. Stir in the blended chile mixture and reduce the heat to a simmer.

Add Hominy
Add the hominy to the pot and stir well. Allow it to simmer for an additional 30-40 minutes, stirring occasionally.

Season the Pozole
Taste the pozole and season with salt and dried oregano. Adjust the seasoning as needed.

Prepare Corn Tortillas
While the pozole is simmering, warm the corn tortillas on a skillet or comal until soft and pliable.

Ladle the pozole into bowls and serve hot with the warm corn tortillas on the side.
