Combine Cheeses
Reduce heat to low and add the Mexican cheese blend and cream cheese to the saucepan. Stir continuously until the cheeses melt and the mixture is smooth.

Make Cream of Corn
In another saucepan, melt the butter over medium heat. Add sweet corn, heavy cream, salt, and black pepper. Cook for about 5-7 minutes, stirring occasionally, until the mixture thickens slightly.

Blend the Mixture
Using an immersion blender, blend the corn mixture until smooth and creamy. If you don't have an immersion blender, transfer to a regular blender and blend until smooth.
Warm Tortillas

Warm the Tortillas
In a dry skillet over medium heat, warm each flour tortilla for about 30 seconds on each side until soft and pliable.
Assemble

Serve
In a serving dish, pour the cheese mixture first, then top it with the cream of corn. Garnish with chopped cilantro. Serve immediately with warm flour tortillas.
