    Prepare the Egg Filling

    In a pan, heat 1 tablespoon of olive oil over medium heat. Crack the eggs into the pan, season with salt and pepper, and scramble until fully cooked. Set aside.

    Prepare the Avocado Lime Crema

    In a blender or food processor, combine the avocados, lime juice, sour cream, and a pinch of salt. Blend until smooth and creamy. Adjust seasoning to taste.

    Assemble the Enchiladas

    Warm the corn tortillas in a dry skillet or microwave to make them pliable. Take one tortilla, place a spoonful of scrambled eggs and cooked chicken (if using) in the center, sprinkle some Mexican cheese, then roll the tortilla tightly. Place seam-side down in a baking dish.

    Add Sauce and Cheese

    Once all tortillas are filled and placed in the baking dish, pour the red or green enchilada sauce over the top. Sprinkle remaining Mexican cheese on top.

    Bake

    Preheat the oven to 350°F (175°C). Bake the enchiladas for 20-25 minutes, until heated through and cheese is melted.

    Serve

    Remove the enchiladas from the oven and let them cool slightly. Serve topped with avocado lime crema, chopped onions, and additional cheese if desired.
