    Prepare the Salata

    In a mixing bowl, combine chopped tomatoes, finely diced red onion, and finely chopped cilantro.

    Dress the Salata

    Add lime juice, olive oil, and salt to the bowl. Toss everything gently to combine. Set aside.

Pickled Yellow Onion

    Slice the Onion

    Thinly slice the yellow onion and place it in a clean jar.

    Make the Pickling Liquid

    In a saucepan, combine apple cider vinegar, water, sugar, and salt. Bring to a simmer over medium heat until sugar and salt dissolve.

    Pickle the Onion

    Pour the hot pickling liquid over the sliced onion in the jar. Let it cool to room temperature, then refrigerate for at least 30 minutes.

Chilaquiles

    Prepare the Tortilla Chips

    In a large skillet, heat a bit of oil over medium heat. Add the tortilla chips and fry until golden and crispy. Remove from the skillet and drain on paper towels.

    Cook the Eggs

    In the same skillet, crack the eggs and cook them sunny-side up or to your preferred doneness.

    Assemble the Chilaquiles

    In a large serving dish, layer the tortilla chips, green salsa, and then top with the cooked eggs, avocado slices, crumbled queso fresco, and dollops of sour cream.

    Add the Salata and Pickled Onions

    Top the chilaquiles with the prepared salata and pickled yellow onions.
