Pork Chops

Season and Sear
Season the pork chops with salt and black pepper on both sides. In a large skillet, heat olive oil over medium-high heat. Once hot, add the pork chops.

Cook Pork Chops
Cook the pork chops for about 4-5 minutes on each side until they are nicely browned and the internal temperature reaches 145°F (63°C). Remove from skillet and let rest.
Biscuits

Prepare Biscuit Dough
In a large bowl, whisk together the flour, baking powder, and salt. Cut in the butter until the mixture resembles coarse crumbs. Stir in the milk until just combined.

Bake Biscuits
Turn the dough onto a floured surface, knead gently, and roll out to about 1 inch thick. Cut into rounds and place on a baking sheet. Bake at 425°F (220°C) for 12-15 minutes until golden brown.
Sausage Gravy

Cook Sausage
In the same skillet used for the pork chops, add the breakfast sausage and cook over medium heat until browned and crumbled.

Sprinkle the flour over the cooked sausage and stir to combine. Gradually add the milk, stirring constantly until the gravy thickens. Season with salt, black pepper, and red pepper flakes.

In a non-stick skillet, crack the eggs and sprinkle with salt and black pepper. Cook over medium-low heat until the whites are set and the yolks are cooked to your liking.
