Pie Crust Preparation

Make the Dough
In a large mixing bowl, combine the all-purpose flour, granulated sugar, and salt.

Add Butter
Cut the cold unsalted butter into small pieces and add it to the flour mixture. Use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.

Add Water
Gradually add cold water, one tablespoon at a time, mixing until the dough comes together. Do not overwork the dough.

Chill the Dough
Form the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

Prepare the Fruit
Wash and cut the fresh fruit into bite-sized pieces if necessary (e.g., peel and slice apples).

Make the Filling
In a large bowl, combine the prepared fruit, granulated sugar, cornstarch, ground cinnamon, lemon juice, and vanilla extract. Toss gently to combine.
Assembling and Baking the Pie

Preheat the Oven
Preheat your oven to 425°F (220°C).

Roll Out the Dough
On a lightly floured surface, roll out the chilled dough into a circle about 12 inches in diameter. Transfer it to a 9-inch pie pan.

Add the Filling
Spoon the fruit filling into the pie crust, spreading it evenly.

Cover the Pie
If desired, roll out a second disk of dough to create a top crust or use the remaining dough to make a lattice top. Seal the edges by crimping with your fingers.

Place the pie in the preheated oven and bake for 45-50 minutes, or until the crust is golden brown and the filling is bubbly.

Remove the pie from the oven and let it cool on a wire rack for at least 2 hours before serving.
