Country Fried Steak

    Prepare the Breading

    In a shallow dish, mix together flour, salt, black pepper, garlic powder, and onion powder.

    Coat the Steaks

    In another shallow bowl, whisk together eggs and milk. Dip each cube steak into the egg mixture, then coat with the flour mixture, pressing lightly to adhere.

    Fry the Steaks

    In a large skillet, heat vegetable oil over medium-high heat. Fry the breaded steaks for about 4-5 minutes on each side until golden brown. Drain on paper towels.

    Mix Dry Ingredients

    In a bowl, combine flour, baking powder, and salt.

    Cut in Butter

    Add the cold, cubed butter into the flour mixture and use a pastry cutter or your fingers to mix until it resembles coarse crumbs.

    Add Milk and Form Dough

    Stir in milk until just combined. Turn dough onto a floured surface and gently knead a few times. Pat into a 1-inch thick slab and cut into rounds.

    Place biscuits on a baking sheet and bake at 425°F (220°C) for about 12-15 minutes until golden brown.

Sausage Gravy

    Cook the Sausage

    In a large skillet, crumble and cook sausage over medium heat until browned.

    Sprinkle flour over the cooked sausage and stir well to combine, cooking for an additional 2-3 minutes.

    Gradually whisk in milk until smooth. Bring to a simmer and cook until thickened. Season with black pepper and salt to taste.

    Peel and dice the russet potatoes into small cubes.

    Place the diced potatoes in a pot of salted water, bring to a boil, and cook until tender, about 10-15 minutes.
