Prepare the Potatoes
Peel and dice the potatoes into small cubes. Boil them in salted water for about 10 minutes or until just tender. Drain and set aside.

Cook the Vegetables
In a large skillet, heat the olive oil over medium heat. Add the diced onion and green bell pepper. Sauté for about 3-4 minutes until softened.

Fry the Hash
Press the mixture down with a spatula and cook for about 5-7 minutes without stirring, allowing it to crisp up. Flip the hash to brown the other side for another 5 minutes.

Cook the Eggs
In a non-stick skillet, melt the butter over low-medium heat. Crack the eggs into the skillet and season with salt and black pepper. Cook to your desired doneness (sunny side up, over easy, etc.).
