Chicken

Prepare the Chicken
In a bowl, combine flour, cornstarch, garlic powder, onion powder, paprika, salt, and pepper. In another bowl, whisk together eggs and milk.

Coat the Chicken
Dip each chicken breast into the egg mixture, then dredge in the flour mixture until well coated.

Fry the Chicken
In a large skillet, heat vegetable oil over medium heat. Fry the chicken breasts for 6-8 minutes on each side until golden brown and cooked through. Remove and set aside.
Sausage Gravy

Cook the Sausage
In a medium saucepan, cook breakfast sausage over medium heat, breaking it apart until fully browned.

Make the Roux
Sprinkle flour over the cooked sausage and stir for 1-2 minutes.

Add Milk and Season
Gradually whisk in milk, salt, black pepper, and red pepper flakes. Cook until thickened, stirring occasionally.
Waffles

Mix Dry Ingredients
In a large bowl, whisk together flour, baking powder, sugar, and salt.

Combine and Cook
Pour the wet ingredients into the dry ingredients and mix until just combined. Preheat your waffle iron and cook according to manufacturer's instructions.
Delly Potatoes

Prepare the Potatoes
Wash and dice the potatoes into bite-sized pieces.

Season and Roast
Toss the potatoes with olive oil, salt, black pepper, garlic powder, and fresh parsley. Spread on a baking sheet and roast at 425°F (220°C) for 25-30 minutes until golden and crispy.
Assembly

Plate the Dish
On a plate, place a waffle, top with a piece of fried chicken, and generously drizzle with sausage gravy. Serve with a side of delly potatoes and maple syrup.
