Make the Biscuit Dough
In a large bowl, whisk together the flour, baking powder, and salt.

Cut in the Butter
Using a pastry cutter or your fingers, cut the butter into the flour mixture until it resembles coarse crumbs.

Add the Milk
Stir in the milk until just combined. Do not overmix.

Shape the Biscuits
Turn the dough onto a floured surface, gently knead it a few times, and pat it into a 1-inch thick round. Cut out biscuits using a biscuit cutter.

Place the biscuits on a baking sheet and bake in a preheated oven at 425°F (220°C) for 15-20 minutes or until golden brown.

Cook the Sausage
In a skillet over medium heat, cook the breakfast sausage until browned and crumbled.

Sprinkle the flour over the cooked sausage, stirring to combine. Gradually add the milk, whisking until smooth. Bring to a simmer until thickened.

Add black pepper and salt to taste, stirring to combine. Cook for an additional 2-3 minutes.

Wash and cut the potatoes into bite-sized cubes.

In a large skillet, heat olive oil over medium heat. Add the potatoes, dill weed, salt, and black pepper. Cook, stirring occasionally, until the potatoes are tender and golden brown, about 15-20 minutes.
