Preparation of Seafood

    Prepare the Seafood

    In a large bowl, rinse the whole belly clams under cold water and set aside. In another bowl, pat the jumbo shrimp, scallops, and haddock fillets dry with paper towels.

Breading Mixture

    Mix Dry Ingredients

    In a large shallow dish, combine the all-purpose flour, cornmeal, Old Bay seasoning, salt, and black pepper. Stir well to combine.

Frying the Seafood

    Heat the Oil

    In a large, deep skillet or fryer, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Coat the Seafood

    Take each piece of seafood (clams, shrimp, scallops, and haddock) and dredge them in the breading mixture, ensuring they are well-coated.

    Fry the Seafood

    Carefully add the breaded seafood to the hot oil in batches. Avoid overcrowding the pan. Fry for about 3-4 minutes or until golden brown and cooked through. Use a slotted spoon to remove them and place on a paper towel-lined plate to drain excess oil.

    In a bowl, soak the sliced onion rings in milk for about 10 minutes. This helps to soften the onions.

    Remove the onion rings from the milk and dredge them in the additional flour until evenly coated.
