Method

Preparation

  1. 1

    Prepare the Ingredients

Dice the potatoes, onion, celery, and carrot into small, even pieces. Cut the haddock fillets into bite-sized chunks.

Cooking the Chowder

  1. 2

    Sauté the Vegetables

In a large pot, add 1 tablespoon of oil over medium heat. Add the diced onion, celery, and carrot. Sauté for about 5 minutes until they start to soften.

  2. 3

    Add the Potatoes

Stir in the diced potatoes and cook for another 3 minutes.

  3. 4

    Add Liquids and Seasonings

Pour in the fish stock and add the bay leaves, thyme, salt, black pepper, and paprika. Bring the mixture to a boil.

  4. 5

    Simmer the Chowder

Reduce the heat to low and let it simmer for about 15-20 minutes, or until the potatoes are tender.

  5. 6

    Add the Haddock and Cream

Stir in the haddock chunks and heavy cream. Cook for an additional 5 minutes until the fish is cooked through and the chowder is heated.

  6. 7

    Finish and Serve

Remove the bay leaves and adjust seasoning if necessary. Serve hot, garnished with chopped parsley and with crusty bread on the side.
