In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually add the cold water while whisking until the batter is smooth and free of lumps.

In a deep-fryer or large heavy pot, heat the vegetable oil over medium-high heat to a temperature of 350°F (175°C). Use a thermometer for accuracy.

Dip the prepared shrimp, calamari rings, and fish fillets into the batter, ensuring they are completely coated.

Carefully place the battered seafood into the hot oil in small batches, avoiding overcrowding. Fry for about 3-4 minutes or until golden brown and crispy. Use a slotted spoon to remove the seafood and place it on paper towels to drain excess oil.
