Prepare the Fish

    Make the Batter

    In a large mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the cold sparkling water until the batter is smooth and free of lumps.

    Heat the Oil

    In a deep frying pan or a large pot, heat the vegetable oil to 350°F (180°C). Use a thermometer for accuracy.

    Batter the Fish

    Dip each fish fillet into the batter, ensuring it is fully coated. Allow excess batter to drip off.

    Fry the Fish

    Carefully place the battered fish into the hot oil, a few pieces at a time. Fry for about 4-5 minutes on each side or until golden brown and crispy. Remove and place on a paper towel-lined plate to drain excess oil.

Prepare the Fries

    Cut the Potatoes

    Peel the russet potatoes and cut them into thick strips, about 1/4 inch wide.

    Soak the Potatoes

    Soak the cut potatoes in cold water for at least 30 minutes to remove excess starch. Drain and pat dry.

    Fry the Potatoes

    In the same hot oil used for frying the fish, fry the potato strips in batches until golden and crispy, about 5-7 minutes. Remove and drain on paper towels. Season with salt to taste.

Make the Tartar Sauce

    Combine Ingredients

    In a bowl, mix together the mayonnaise, finely chopped dill pickles, capers, lemon juice, and fresh dill (if using). Stir until well combined.
