Main Ingredients

Method

Preparation of Ingredients

  1. 1

    Slice the Onions

Peel and slice the yellow onions into thin rings.

  2. 2

    Mince the Garlic

Peel and mince the garlic cloves finely.

  3. 3

    Prepare the Baguette

Slice the baguette into 1-inch thick slices and set aside.

Cooking the Soup

  1. 4

    Sauté the Onions

In a large pot, melt the butter over medium heat. Add the sliced onions and sauté for about 20-25 minutes, stirring frequently, until they are caramelized and golden brown.

  2. 5

    Add Garlic

Add the minced garlic to the pot and sauté for an additional 2 minutes until fragrant.

  3. 6

    Deglaze the Pot

Pour in the dry white wine, scraping up any brown bits from the bottom of the pot. Allow the wine to simmer for about 5 minutes.

  4. 7

    Add Broth and Seasonings

Add the beef broth, bay leaves, thyme, salt, and black pepper to the pot. Bring the mixture to a boil, then reduce the heat and let it simmer for 30 minutes.

Serving the Soup

  1. 8

    Toast the Baguette

While the soup simmers, preheat your oven to 350°F (175°C). Place the baguette slices on a baking sheet and toast them in the oven for about 10 minutes, until golden brown.

  2. 9

    Prepare the Cheese

Remove the bay leaves from the soup and ladle the soup into oven-safe bowls. Place a slice of toasted baguette on top of each bowl of soup and sprinkle generously with Gruyère cheese.

  3. 10

    Broil the Soup

Place the bowls under the broiler for about 3-5 minutes, or until the cheese is melted and bubbly. Watch closely to prevent burning.

  4. 11

    Serve Hot

Carefully remove the bowls from the oven and serve the onion soup hot, garnished with additional thyme if desired.
