Method

Cake Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 425°F (220°C). This ensures that the cake will bake properly.

  2. 2

    Prepare the Ramekins

Grease four 6-ounce ramekins with butter and dust with flour, tapping out the excess. This will help the cakes release easily after baking.

  3. 3

    Melt the Chocolate and Butter

In a medium saucepan over low heat, melt the unsalted butter and semi-sweet chocolate together. Stir occasionally until completely smooth, then remove from heat.

  4. 4

    Mix Sugar and Eggs

In a large mixing bowl, combine granulated sugar, large eggs, and large egg yolks. Whisk together until the mixture is pale and slightly thickened.

  5. 5

    Combine Mixtures

Slowly pour the melted chocolate and butter mixture into the egg mixture while whisking continuously to combine.

  6. 6

    Add Flour and Vanilla

Gently fold in the all-purpose flour, vanilla extract, and a pinch of salt until just combined. Be careful not to overmix.

  7. 7

    Fill Ramekins

Evenly distribute the batter among the prepared ramekins, filling them about 2/3 full.

  8. 8

    Bake the Cakes

Place the ramekins in the preheated oven and bake for 12-14 minutes, or until the edges are firm but the center is soft.

  9. 9

    Cool and Serve

Remove the ramekins from the oven and let them cool for 1 minute. Carefully invert each ramekin onto a plate, tapping gently to release the cake. Serve immediately with a scoop of vanilla ice cream on the side.
