Method
Marinate Chicken

Prepare Marinade
In a large bowl, combine buttermilk, hot sauce, salt, black pepper, and paprika. Mix well.

Marinate Chicken
Add the chicken thighs to the marinade, ensuring they are fully submerged. Cover and refrigerate for at least 2 hours, or overnight for best results.

Mix Dry Ingredients
In a separate bowl, whisk together flour, cornstarch, garlic powder, onion powder, salt, black pepper, and cayenne pepper.

Coat Chicken
Remove the chicken from the marinade, allowing excess to drip off. Dredge each piece in the flour mixture, ensuring an even coating. Shake off any excess flour.
Fry Chicken

Heat Oil
In a deep skillet or fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry Chicken
Carefully place the coated chicken in the hot oil. Fry for 12-15 minutes, turning occasionally, until golden brown and cooked through (internal temperature should reach 165°F/75°C).

Remove the fried chicken and place on a wire rack or paper towels to drain excess oil.

In a large bowl, combine flour, baking powder, sugar, and salt.

Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.

Preheat your waffle maker and then pour the batter into the waffle maker. Cook according to the manufacturer's instructions until golden brown.

Place a waffle on a plate, top with a piece of fried chicken, and drizzle with maple syrup. Optionally, sprinkle with powdered sugar.
