Method

Vanilla Spongecake

    Preheat Oven

    Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.

    Mix Dry Ingredients

    In a bowl, whisk together the all-purpose flour, baking powder, and salt. Set aside.

    Beat Eggs and Sugar

    In a large mixing bowl, beat the eggs and granulated sugar together until light and fluffy, about 5-7 minutes.

    Add Vanilla and Milk

    Add the vanilla extract and milk to the egg mixture and mix until combined.

    Combine Mixtures

    Gradually fold the dry ingredients into the wet mixture until just combined. Do not overmix.

    Bake

    Pour the batter into the prepared baking pan and bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.

    Cool

    Allow the cake to cool in the pan for 10 minutes, then turn it out onto a wire rack to cool completely.

Tres Leches Mixture

    Prepare Mixture

    In a bowl, whisk together the sweetened condensed milk, evaporated milk, and whole milk until well combined.

    Soak Cake

    Once the sponge cake has cooled, poke holes all over the cake with a fork and pour the tres leches mixture over the cake. Allow it to soak for at least 1 hour in the refrigerator.

Toasted Meringue

    Beat Egg Whites

    In a clean mixing bowl, beat the egg whites with an electric mixer until foamy.

    Add Cream of Tartar

    Add cream of tartar and continue beating until soft peaks form.

    Gradually Add Sugar

    Gradually add granulated sugar, one tablespoon at a time, until stiff peaks form and the meringue is glossy.

    Pipe Meringue

    Spread or pipe the meringue over the soaked tres leches cake.

    Toast Meringue

    Using a kitchen torch or broiler, toast the meringue until golden brown.

Seasonal Fruit

    Prepare Fruit

    Wash and slice the strawberries, peel and slice the kiwi, and rinse the blueberries.

  2. 16

    Decorate Cake

    Arrange the seasonal fruit on top of the toasted meringue as desired.
