Preparation of Clarified Milk Wash

    Combine Ingredients

    In a bowl, mix the whole milk, sugar, and lemon juice until the sugar is fully dissolved.

    Strain the Mixture

    Pour the mixture through a fine mesh sieve or cheesecloth into another bowl to separate the curds from the whey. Let it sit for about 30 minutes.

    Collect the Clarified Milk

    After straining, the liquid that remains is your clarified milk wash. Set it aside for later use.

Prepare Banana Infused Rum

    Infuse the Rum

    Peel the ripe bananas and place them in a jar. Pour the Havana Club Rum over the bananas, ensuring they are fully submerged. Seal the jar and let it sit in a cool, dark place for 24-48 hours.

    Strain the Infusion

    After the infusion period, strain the rum through a fine mesh sieve to remove the banana solids. The resulting liquid is your banana-infused rum.

Mixing the Cocktail

    Combine Ingredients

    In a cocktail shaker, combine 60 ml of the banana-infused Havana Club Rum, 30 ml of lime juice, and 4 dashes of tiki bitters.

    Shake the Cocktail

    Fill the shaker with ice and shake vigorously for about 15 seconds until well chilled.

    Strain into Glass

    Using a fine mesh strainer, pour the cocktail into a chilled glass filled with ice.

    Layer the clarified milk wash over the top of the cocktail gently to create a beautiful presentation.
