For the Carnitas

Prepare the Pork
In a slow cooker, place the pork shoulder. Add minced garlic, diced onion, cumin, oregano, salt, and black pepper. Pour in the orange juice and lime juice.

Cook the Carnitas
Cover and cook on low for 8 hours or until the pork is tender and shreds easily with a fork.

Shred the Pork
Once cooked, remove the pork from the slow cooker and shred it with two forks.

Blend the Salsa
In a blender, combine the roasted vegetables with cilantro, lime juice, and salt. Blend until smooth.
For the Chipotle Crema

Prepare the Chipotle Crema
In a small bowl, combine sour cream, chopped chipotle peppers, and lime juice. Mix until well combined.
For Assembly

Assemble the Taquitos
Warm the corn tortillas slightly to make them pliable. Fill each tortilla with shredded carnitas and roll tightly.

Serve
Place the taquitos on a plate. Drizzle with fire-roasted salsa, top with chipotle crema, sprinkle with queso fresco, and garnish with shredded lettuce.
