Marinate the Pork

    In a bowl, combine olive oil, minced garlic, dried oregano, ground cumin, chili powder, salt, and black pepper. Mix well to form a marinade.

    Cut the pork shoulder into chunks and coat with the marinade. Cover and refrigerate for at least 2 hours, preferably overnight for best flavor.

    Preheat your grill or skillet over medium-high heat. Grill or sear the marinated pork pieces for about 20-25 minutes until cooked through and slightly charred, turning occasionally.

    In the last 5 minutes of cooking, add the diced pineapple to the grill or skillet to caramelize slightly.

    Chop and Mix

    Once the pork is cooked, let it rest for a few minutes before chopping it into small pieces. In a bowl, combine the chopped pork, fresh cilantro, and diced onion.

    Warm the corn tortillas on a skillet for about 30 seconds on each side until soft and pliable.

    Place a generous amount of the pork mixture onto each tortilla. Top with salsa verde and additional cilantro if desired.
