Method

Waffles

  1. 1

    Prepare the Waffle Batter

In a large mixing bowl, whisk together the all-purpose flour, baking powder, sugar, and salt until well combined.

  2. 2

    Mix Wet Ingredients

In another bowl, whisk together the milk, egg, and melted unsalted butter until smooth.

  3. 3

    Combine Mixtures

Pour the wet ingredients into the dry ingredients. Stir gently until just combined; do not overmix.

  4. 4

    Cook Waffles

Preheat your waffle iron according to the manufacturer’s instructions. Pour the batter into the waffle iron and cook until golden brown. Repeat with remaining batter.

Strawberry Guava Sauce

  1. 5

    Cook the Sauce

In a medium saucepan, combine the fresh strawberries, guava puree, sugar, and lemon juice. Bring to a simmer over medium heat.

  2. 6

    Thicken the Sauce

Cook for about 10 minutes, stirring occasionally, until the strawberries soften and the mixture thickens slightly. Remove from heat and let cool.

Toasted Pepitas

  1. 7

    Toast the Pepitas

In a skillet over medium heat, combine the pepitas, olive oil, and salt. Cook, stirring frequently, until the seeds are golden and fragrant, about 5-7 minutes.

  2. 8

    Cool the Pepitas

Remove from heat and let cool on a paper towel to absorb excess oil.

Yuzu Cream Cheese

  1. 9

    Prepare the Cream Cheese Mixture

In a medium bowl, combine the cream cheese, yuzu juice, and powdered sugar. Beat with an electric mixer until smooth and creamy.

  2. 10

    Chill the Mixture

Refrigerate the yuzu cream cheese for about 15 minutes before serving to allow the flavors to meld.
