Method

Shrimp Preparation

  1. 1

    Marinate the Shrimp

In a bowl, combine olive oil, minced garlic, cumin, paprika, salt, and black pepper. Add the shrimp and toss to coat evenly. Let it marinate for at least 15 minutes.

  2. 2

    Cook the Shrimp

Heat a skillet over medium-high heat. Add the marinated shrimp and cook for 2-3 minutes on each side until they are pink and opaque. Remove from heat and set aside.

Poblano Crema Preparation

  1. 3

    Prepare the Poblano

Roast the poblano pepper over an open flame or in the oven until the skin is charred. Allow it to cool, then peel off the skin, remove the seeds, and chop finely.

  2. 4

    Make the Crema

In a bowl, combine the roasted poblano, sour cream, lime juice, and salt. Mix well until smooth and creamy.

Pineapple Pico Preparation

  1. 5

    Combine Ingredients

In a mixing bowl, combine diced pineapple, chopped red onion, cilantro, jalapeño, lime juice, and salt. Toss gently to combine and let sit for 10 minutes for flavors to meld.

Red Cabbage Slaw Preparation

  1. 6

    Mix Slaw Ingredients

In a large bowl, combine shredded red cabbage, shredded carrot, apple cider vinegar, olive oil, and salt. Toss well to combine and let sit for at least 10 minutes.
