    Season the Short Ribs

    Generously season the beef short ribs with salt and black pepper on all sides. Let them sit at room temperature for about 30 minutes.

    Sear the Ribs

    In a large, heavy-bottomed pot or Dutch oven, heat olive oil over medium-high heat. Add the short ribs in batches, being careful not to overcrowd the pot. Sear for about 4-5 minutes on each side until browned. Remove the ribs and set aside.

    Sauté the Vegetables

    In the same pot, add the chopped onion, diced carrots, and diced celery. Sauté for about 5-7 minutes until softened. Add the minced garlic and cook for an additional 1-2 minutes until fragrant.

    Deglaze the Pot

    Pour in the red wine and scrape up any browned bits from the bottom of the pot. Let it simmer for about 2-3 minutes.

    Add Remaining Ingredients

    Stir in the beef broth, thyme, bay leaves, and tomato paste. Bring the mixture to a boil.

    Braise the Short Ribs

    Return the seared short ribs to the pot, making sure they are mostly submerged in the liquid. Cover the pot with a lid and reduce the heat to low. Allow the ribs to braise for about 3 hours, until they are very tender.

Serving

    Serve the Short Ribs

    Once the ribs are done, remove them from the pot and let them rest for a few minutes. Discard the bay leaves. Serve the short ribs with the vegetables and sauce, garnished with chopped fresh parsley.
