Preparation

    Prepare the Simple Syrup

    If you do not have simple syrup ready, combine equal parts sugar and water in a saucepan. Heat over medium heat, stirring until the sugar has completely dissolved. Allow to cool before using.

    Separate the Egg White

    Crack the egg and carefully separate the egg white from the yolk, placing the egg white in a mixing glass. Discard the yolk or save it for another use.

Mixing the Cocktail

    Combine Ingredients

    In a cocktail shaker, add the pisco, fresh lime juice, simple syrup, and egg white.

    Dry Shake

    Seal the shaker and shake vigorously without ice for about 15 seconds. This will help emulsify the egg white and create a frothy texture.

    Shake with Ice

    Add ice to the shaker and shake again for another 15-20 seconds until well-chilled.

    Strain

    Strain the mixture into a chilled coupe glass or cocktail glass.

Garnishing

    Add Bitters

    Drop 2 dashes of Angostura bitters on top of the frothy surface of the cocktail.

    Garnish with a lime wheel placed on the rim of the glass.
