Method

Cooking the Protein

  1. 1

    Prepare the Flank Steak

Season the flank steak with salt and pepper. Heat a grill or skillet over medium-high heat and cook the steak for about 5-7 minutes per side for medium-rare. Once cooked, let it rest for 5 minutes before slicing thinly against the grain.

  2. 2

    Cook the Chorizo

Remove the chorizo from its casing and crumble it into a skillet over medium heat. Cook for about 5-7 minutes until browned and fully cooked, stirring occasionally.

Preparing the Beans

  1. 3

    Heat the Black Beans

Drain and rinse the black beans. In a small saucepan, heat the beans over medium heat for about 5 minutes until warmed through. Season with salt and pepper to taste.

Making Pico de Gallo

  1. 4

    Chop Ingredients for Pico

Dice the tomatoes, red onion, and jalapeño. In a bowl, combine the diced tomatoes, red onion, chopped cilantro, lime juice, and jalapeño. Mix well and set aside.

Cooking Plantains

  1. 5

    Prepare the Plantains

Peel the plantains and cut them into 1-inch thick slices. Heat oil in a skillet over medium heat. Fry the plantains for about 3-4 minutes on each side until golden brown. Remove and drain on paper towels.

Assembling the Bowl

  1. 6

    Combine All Ingredients

In a large bowl, layer the sliced flank steak, cooked chorizo, black beans, pico de gallo, fried plantains, and sliced avocado. Top with fresh cilantro before serving.
