Preparation of the Seafood

    Prepare the Ingredients

    Clean and devein the shrimp, removing the shells. Boil the octopus in salted water for about 45 minutes until tender, then chop into bite-sized pieces. Clean and slice the calamari into rings. Cut the fish fillet into small cubes.

    Marinate the Seafood

    In a large bowl, combine the shrimp, octopus, calamari, and fish. Season with salt and black pepper, and let marinate in the refrigerator for at least 15 minutes.

Preparation of Leche de Tigre

    Blend the Ingredients

    In a blender, combine lime juice, fish stock, cilantro, garlic, ginger, hot pepper, salt, and black pepper. Blend until smooth.

    Strain the Mixture

    Pour the blended mixture through a fine-mesh sieve into a bowl, pressing down with a spatula to extract all the liquid. This is your leche de tigre.

Assembly

    Plate the Mixto

    In a serving bowl, arrange the marinated seafood. Drizzle the leche de tigre generously over the seafood.

    Add Garnishes

    Top with sliced red onion, diced avocado, and cooked corn kernels for added flavor and texture.
