Guacamole

    Prepare the Ingredients

    Cut the avocados in half, remove the pit, and scoop the flesh into a mixing bowl. Finely chop the red onion, jalapeño, and cilantro.

    Mash the Avocados

    Using a fork or a potato masher, mash the avocados to your desired consistency.

    Mix in Remaining Ingredients

    Add lime juice, red onion, jalapeño, cilantro, salt, and black pepper to the mashed avocados. Stir until well combined.

    Taste and Adjust Seasoning

    Taste the guacamole and adjust the seasoning with more salt, lime juice, or pepper if needed.

Fire-Roasted Salsa

    Prepare the Ingredients

    Finely chop the red onion and jalapeño, and chop the cilantro.

    Mix Salsa Ingredients

    In a mixing bowl, combine the fire-roasted tomatoes, red onion, jalapeño, cilantro, lime juice, and salt.

    Stir and Taste

    Mix the ingredients well and taste. Adjust seasoning with more salt or lime juice if desired.

Tortilla Chips

    Prepare the Tortillas

    Cut each corn tortilla into 6 wedges.

    Heat the Oil

    In a large pot, heat vegetable oil over medium heat until it reaches 350°F (175°C).

    Fry the Tortilla Wedges

    Carefully add tortilla wedges to the hot oil in batches, frying for about 2-3 minutes or until golden brown and crispy.

    Drain and Season

    Remove the chips from the oil and drain on paper towels. While still hot, sprinkle with salt.

Plantain Chips

    Prepare the Plantains

    Peel the green plantains and slice them into thin rounds (about 1/8 inch thick).

    In a large pot, heat vegetable oil over medium heat until it reaches 350°F (175°C).

    Carefully add plantain slices to the hot oil in batches, frying for about 3-4 minutes or until golden brown and crispy.
