Fish Tacos

Prepare the Fish
In a bowl, combine the olive oil, salt, black pepper, and cumin powder. Add the fish fillets and marinate for 15 minutes.

Cook the Fish
Heat a skillet over medium heat. Cook the marinated fish for 3-4 minutes on each side or until cooked through and flaky. Remove from heat and let cool slightly.

Warm the Tortillas
In the same skillet, warm the corn tortillas for about 30 seconds on each side until soft and pliable.

Make the Coleslaw
In a large bowl, combine shredded cabbage and grated carrot. In a separate bowl, mix mayonnaise, minced chipotle, lime juice, and salt until well combined. Pour the dressing over the cabbage and carrot mixture, and toss until everything is evenly coated. Refrigerate for at least 30 minutes.
Salsa Criolla

Prepare the Salsa
In a medium bowl, combine the sliced red onion, diced tomato, diced green bell pepper, chopped cilantro, red wine vinegar, and salt. Toss well and let sit for at least 15 minutes to allow the flavors to meld.

Assemble the Tacos
To assemble, place a piece of cooked fish on a warm tortilla, top it with chipotle coleslaw and salsa criolla. Garnish with micro cilantro and serve with lime wedges on the side.
