    Prepare the Shrimp

    In a bowl, soak the rock shrimp in buttermilk for at least 30 minutes. This will help tenderize the shrimp and enhance flavor.

    Make the Coating

    In a separate bowl, combine the all-purpose flour, cornstarch, cayenne pepper, garlic powder, salt, and black pepper. Mix well to create a seasoned coating.

    Heat the Oil

    In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping a small piece of batter into it; if it sizzles, it's ready.

    Fry the Shrimp

    Remove the rock shrimp from the buttermilk, allowing excess to drip off. Dredge the shrimp in the seasoned flour mixture, ensuring an even coating. Carefully place the shrimp in the hot oil, frying in batches to avoid overcrowding. Fry until golden brown and crispy, about 2-3 minutes per batch. Use a slotted spoon to remove and drain on paper towels.

    Prepare the Wontons

    Preheat your oven to 375°F (190°C). Lightly grease a muffin tin. Press each wonton wrapper into the muffin tin to form taco shells. Bake for 8-10 minutes until golden and crispy.

    In a bowl, mash the avocado and mix with the juice of the lime. Add a pinch of salt to taste.

    Assemble the Tacos

    Once the wonton shells are baked and crispy, fill each shell with a few pieces of crispy rock shrimp. Top with the avocado sauce, a dollop of sour cream, chopped cilantro, and a drizzle of hot sauce.
